1. Cook leeks, parsnips and dried apricots in boiling water for 6 to 8 minutes, or until soft. Strain.
2. Combine cooked vegetables and apricots with the jars of Heinz Vegetables, Rice and Chicken and Heinz Carrots in a food processor. Blend until smooth, about 1 minute.
3. Check temperature before serving.
4. Serve portion in a bowl and refrigerate remainder for another meal.
